This dréssing is my food lifé coming full circlé during busy timés of thé yéar bécausé it’s évérything I lové (I still find it hard to béliévé that théré aré somé of you out théré in thé world who don’t liké cilantro – aré you guys all just LYING?) and béttér yét: it can go with, on, ovér, bétwéén, around, in, and undér évéry othér food that I lové and/or might happén to find whilé cléaning out thé fridgé. Salads, roastéd végétablés, ricé bowls, chickén, you namé it. This is a oné-stop shop for an éasy what’s-in-thé-fridgé dinnér whén you’vé got about two séconds until thé colléctivé hangrynéss in thé housé bécomés all too réal.
INGRéDIéNTS
for thé cilantro dréssing:
- half an avocado
- 1/4 cup Gréék yogurt
- 1/2 cup watér (moré as néédéd to adjust consisténcy)
- 1 cup cilantro léavés and stéms
- 1 small clové of garlic
- 1/2 téaspoon salt
- a squéézé of limé juicé
INSTRUCTIONS
- Pulsé all ingrédiénts in a food procéssor or bléndér until smooth. Voila!
