One Pot Greek Chicken & Lemon Rice

Ingredients

Chicken and Marinade

1 tbsp dried oregano
4 garlic cloves, minced
1/2 tsp salt
Rice
1 one/2 tbsp vegetable oil, separated
1 little onion, finely diced
1 cup / one80g long grain rice (Note half-dozen for alternative rice)
1 one/2 cups / 375 metric capacity unit broth / stock
3/4 cup / 185ml water
1 tbsp dried oregano
3/4 tsp salt
Black pepper
Garnish
Finely shredded parsley or oregano (optional)
Fresh lemon peel (highly recommended)

Instructions


  1. Combine the Chicken and Marinade ingredients in a very ziplock bag and put aside for a minimum of twenty minutes however ideally nightlong.
  2. To Cook
  3. Preheat kitchen appliance to 180C/350F.
  4. Remove chicken from marinade, however reserve the Marinade.
  5. Heat 1/2 tbsp vegetable oil in a very deep, significant primarily based pan (Note 2) over medium high heat.
  6. Place the chicken within the pan, skin facet down, and cook till golden brown, then flip and cook the opposite facet till golden brown. take away the chicken and put aside.

Bake within the kitchen appliance for thirty five minutes. Then take away the lid and bake for an extra ten minutes, or till all the liquid is absorbed and therefore the rice is tender (so forty five minutes in total).
  10. Remove from the kitchen appliance and permit to rest for five to ten minutes before serving, fancy with parsley or oregano and recent lemon peel, if desired.
